“中国零食自主制造第一股”焕发“第二春”?

过去一年,由于疫情的反复爆发导致原材料上涨,淘宝去中心化,线上线下渠道的分流,叠加经济形势下滑的宏观大环境,零食企业接连遭受重挫,致使股价大幅回调,接近腰斩。

目前来看,打击休闲食品企业的诸多因素仍未消解,但盐津铺子却开启了反转行情。

自3月以来,盐津铺子(002847.SZ)股价一路上涨,连创90日新高。从最低54.64元/股涨至最高95.49元/股。截止到7月19日收盘,股价定格在89.24元/股,总市值114.8亿,市盈率高达88.27倍。

与股价暴涨相辅相成的是,盐津铺子的业绩也可圈可点。

7月14日晚间,盐津铺子披露了2022年半年度业绩预告,实现净利润1.23亿元-1.3亿元,同比增长152.97%-167.37%;扣非净利润1.08亿元-1.15亿元,同比增长491.35%-528.10%。

包括华鑫证券、开源证券、信达证券等多家券商机构给出了“买入”评级。甚至,华泰证券给出了104.85元的目标价格。 

事实上,行业寒冬之下,休闲零食赛道的玩家日子都不好过。可以预见,随着市场中零食产品的发展与完善,零食赛道的竞争也会愈发激烈。盐津铺子却在逆境之下走出上扬曲线,那么对于投资人而言,这是否意味着投资机会? 

财经无忌试图聚焦以下三个问题 

1、盐津铺子是如何成为“初代零食顶流”的? 

2、“中国零食自主制造第一股”为何跑不快? 

3、作为资本追逐焦点,它距离真正的价值重估还有多远? 

“另辟蹊径”成就小品类休闲食品“黑马”

上世纪80年代,张学武的父亲在湖南浏阳做起了凉果蜜饯的生意,在雇了六七个人后,小作坊开业了。他给这个作坊起了个寓意宏大的名字:腾飞食品厂。 

虽然这一颇受湖南当地人欢迎的零食,受众比较广泛。但做法也不复杂,原材料过盐腌制,加上糖来调味。再加上,行业门槛低加上工业化程度低,腾飞食品厂发展的并不尽如人意。 

“父亲一看到有人上门检查食品卫生,就恨不得躲起来。”一句话也暴露出小作坊的局限性。 

2005年,张学武接过了父亲的作坊式小食品厂,创办了盐津铺子。这位从外资食品企业出生的创业者显然有自己的思考: 

“既然国外一片薯片、一块饼干、一颗糖果或者巧克力都能做成品牌,那盐津食品也一定能从地方特产做成中国的品牌”。

著名的商业大师艾·里斯曾在他的《定位》一书中这样写道,定位就是“在潜在顾客的心智中做到与众不同”。彼时的休闲零食行业中,品牌意识才刚刚崛起。洽洽食品、来伊份三只松鼠良品铺子等都已经揭竿而起,盐津铺子却“另辟蹊径”——凭借盐津的手法,以盐津杨梅、盐津葡萄等蜜饯产品打开了市场。 

这一采取差异化竞争策略,以凉果蜜饯独立散装产品填补行业空白,专注传统小品类休闲食品也无意间让盐津铺子避开了休闲零食行业巨头的优势领域,为“中国零食自主制造第一股”打下了基础。 

而对于盐津铺子来说, 走出最为关键的一步就是进入当时更高端的商超渠道。

1992 年,国家颁布了《关于商业零售领域利用外资问题的批复》,3年后,食品及连锁经营领域放开,外资商超在中国开始跑马圈地,联华、永辉、大润发等也处于蓬勃发展期。 

比如,1999 年入华的家乐福,在 2003-2006 年以每年 16 家速度迅速扩张。同一时期入华的沃尔玛,在 2010 年也在全国 24 个省份开设 219 家门店。 

从开店角度看,2002 年-2010 年超市门店 CAGR 超 30%,而盐津铺子在成立的第二年便与沃尔玛合作,通过直营全国性 KA 商超实现连锁扩张,各地经销商跟随覆盖下沉渠道,直营+经销营收占比维持 90%以上,踏上了与商超快速发展的共振期。 

与此同时,盐津铺子定位自主制造型零食企业,并针对休闲零食迭代周期较短的特点打造“实验工厂”模式,形成“研发-试产-试销-量产”标准化流程,灵活把握消费趋势,适时推陈出新。

十年间,盐津铺子陆续推出豆制品、肉制品、坚果炒货、素食糕点、鱼豆腐等多个品类,基本实现小品类零食的全覆盖。张学武的愿景是: 盐津铺子是如华为一样的“零食自主制造商的第一股”,或者再直接些——“零食界的华为”。

天时、地利、人和,盐津铺子都有了。2017年,张学武把企业的年营收做到了7.54亿,在深交所敲响了上市的钟声。盐津铺子也成功登顶“中国零食自主制造第一股”,成为行业最早的一匹黑马。 

起大早赶晚集,渠道短板为何不是掉队关键?

零食市场没有永恒的扛把子。如果要给当下的休闲零食巨头排名次,盐津铺子上市后的表现在行业内却是落在了末尾,业绩表现差强人意。 

是什么让盐津铺子“败走麦城”? 

在外界看来,盐津铺子的“败走”本质原因在于战略的判断失误,由于固守传统商超这一渠道,导致错失了电商和社区团购的红利。

事实上,伴随着2013年互联网渠道的快速兴起,盐津铺子一年后就以自有资金投资设立全资电商子公司布局线上平台,并在 2015 年签约何炅成为公司首位形象代言人。 

2017年,盐津铺子还曾短暂的模仿其他休闲食品公司的线上化之路,虽然2018年盐津铺子电商子公司收入较 2017 年大幅增长 203%,达到了 1.63 亿元。但是由于靠低价补贴来获得增长,并不可持续。 

从这个维度上来说,本应是“鸭先知”的盐津铺子变成了“鸭后知”,失去了线上渠道的第一波红利。 

另一方面,从2020年开始,社区团购陆续崛起,对盐津铺子和它赖以为生的商超场景造成了一定的冲击。

在社区团购业态的冲击面前,商超们的情况不太理想,例如永辉超市2020年的净利润就一路走低,到了第四季度甚至由盈转亏;老牌商超人人乐直接宣布关闭全国各地的19家门店。可以想见,在商超们密集的关店行动和业绩下滑背后,严重依赖线下的盐津铺子出现盈利暴跌。 

2020年盐津铺子实现营业收入19.59亿元,同比增长39.99%;归属于上市公司股东的净利润2.42亿元,同比增长88.7%,整体发展势头迅猛。但到了2021年,盐津铺子的业绩却急转直下,股价遭遇连续跌停。 

抛开疫情因素,盐津铺子把这个“锅”推给社区团购,其在公告中表示,“公司低估了社区团购等新零售渠道对传统商超渠道的影响。” 

表面上看,缺乏线上基因使得盐津铺子一次又一次失去机会,但从更深层次来说, 背后是盐津铺子核心竞争力的缺位。

一个例子是,同样是线下起家的洽洽,从瓜子到坚果,不断打造产品的核心竞争力,这让洽洽即便在电商红利之外,也能拥有持续增长的潜力;从时间点来看,同样受到社区团购影响的三只松鼠,在当年的业绩却不降反增。 

众所周知,我国休闲食品品类丰富、种类繁多,消费者覆盖范围相对较广,如何做出让消费者更易获得,做好新产品、品类开发让消费者重复购买,是行业内企业普遍都面临的难题。 

目前来看,行业发展最好也是最普遍的做法是打造超级大单品,在消费市场形成品牌即品类的认知,围绕着单一品类建立起坚固的护城河,持续推出新品类,建立品类帝国。达利食品、亿滋国际皆如此。 

反观盐津铺子,它虽以凉果蜜饯和豆制品发家,还有着其他企业不具备的ODM(自主生产)模式加持,却没能在这两个品类中称王称霸多久,先发优势完全没有得到体现。 

而没有完成品类认知的盐津铺子,又将主品牌定位于“辣卤专家”,推出深海零食子品牌“31度鲜”、薯片品牌薯惑、休闲烘焙品牌憨豆爸爸等。 

以辣卤为例,行业“老大哥”卫龙一旦上市成功,必会进一步提升它的供应链和渠道能力;而良品铺子、三只松鼠、百草味等也接连入局,推出辣条等产品抢占市场。 

这意味着,盐津铺子每推出一个不符合其在消费认知定位的产品,都将消耗更多的企业资源来打开市场。这种还没有学会走就准备起跑的做法,将给盐津铺子现在以及未来打来巨大的压力。

盐津铺子还能“深蹲起跳”吗?

盐津铺子正在积极的自救,这是近几个月其成为资本追捧的底层逻辑。 

客观而言,面对后疫情时代零售渠道去中间化再去中心化之后的行业新局面,行业增速放缓和渠道变革,对休闲食品行业头部公司来说,都殊为不易。盐津铺子开始大刀阔斧主动进行业务转型。 

首先是,聚焦核心品类,选择进入细分市场中有体量、有成长空间、有供应链优势、未形成垄断的细分赛道,试图从中分一杯羹。

事实上,盐津铺子自诩是“零食界的华为”。言外之意,不同于三只松鼠、良品铺子的代工模式,盐津铺子采用的是自主生产的模式。 

盐津铺子最引以为傲的就是“实验工厂”,在其模式助力下,产品可迅速完成从研发至规模生产,这是其公司产品可以快速抢先占领市场的重要因素。 

财报上显示,从2017年到2021年,盐津铺子研发投入从1658万增加至5150万,研发投入占营业总额比例常年保持在2%以上。其中2021年,研发投入和研发人员数量翻近一倍,这一数据在整个行业都居于前列。 

在高投入之下,盐津铺子将更多精力聚焦在五大核心品类上(烘焙、薯片、深海零食、辣卤、果干),从小品类向多品牌延伸,打造多重增长曲线。

不过,供给端在大单品有限下规模效应较难以显现,尽管烘焙、深海零食、果干等新品放量贡献业绩增长,但较难迭代以此形成品牌壁垒。在行业整体发展遇阻下,天花板也显而易见。 

以旗下打造成功的第二增长曲线为例,2018年到2020年,盐津铺子烘焙类产品收入呈翻倍式增长,其金额从2.15亿元增至6.8亿元。但在由于产品同质化严重,赛道竞争日益激烈等导致了烘焙产品增长放缓。 

其次,盐津铺子试图改变自己长期高度依赖传统商超的“线下为王”的经营模式。

自2018年起,盐津铺子推出食品店的尝试,即开在超市里所谓的商超岛中岛,过去,盐津铺子借助这种与商超一荣俱荣的模式占据了一二线城市的市场。如今,盐津铺子将从头部门店,逐渐拓展到腰部门店、腿部门店。 

值得一提的是,2020 年以来,盐津铺子先入引入了多位职业经理人,其中就有主导卫龙白袋换代、推出魔芋爽和风吃海带爆款单品的张小三。后者提出了——不做“小而美”,关注年轻人群喜好,打造年轻化大众化品牌。 

但面对日趋复杂的休闲零食行业竞争态势,盐津铺子这种方式只是入驻了平台,而不是独家经销。渠道如果做不到排他性,竞争对手也会紧随而来。 

最后,盐津铺子将这场“背水一战”的破局点定在了价格战上。

在盐津铺子看来,现在年轻人对品牌的忠诚度不高,选购零食主要看性价比以及便利程度。张学武在2021年7月的电话会议上时提到,跟竞争对手对比的话,他们在核心单品的价格上至少有15个点的优势。 

客观而言,随着国内人口增长逐渐触顶以及人口老龄化的趋势,在消费难以提振的大环境下,休闲零食这类消费几乎已经被设定了增长的天花板,更多的成为存量争夺的战场。这是长期看国内休闲零食行业发展不得不考虑的大背景。 

今年4月,三只松鼠提出了人人吃得起,处处买的到”的战略,顺势喊出了“坚果自由”的口号。对比三只松鼠,盐津铺子并没有形成较强的品牌力,在主品牌力不足的情况下,相继推出了其他子品牌,一旦下沉,前方未必是坦途。 

零食是一个进入门槛低、可复制强的行业,一个新产品出来之后,其他公司会很快模仿。所以每家企业的品牌力都很重要,也要摸索一个适合的长期战略。

于投资者而言,虽然盐津铺子战术方针已敲定,但是未来到底存在多大想象空间,存在很大的变数。在众多答案还未解锁之前,需要更多有力的佐证。
