喜姐炸串想上市,靠谱吗?

搞钱,是王宽宽的核心宗旨,最好速度还可以再快点。 

为了快速赚钱,地地道道农民出身的王宽宽高中不好好读书,去网吧通宵卖电子书,考上大学也只读了半年就辍学。21岁开始创业,起起伏伏,从麻辣烫、火锅店到烧烤店、羊肉汤店,喜姐炸串已经是王宽宽的第11次创业。 

很自然的,“快”,同样成为贯穿喜姐炸串的主线:从第1家门店到200+门店,喜姐炸串只用了一年的时间,之后的速度保持在平均一天开三店。“百城万店”,是喜姐炸串的最终目标。 

王宽宽的野心当然不止于此,他还想让喜姐炸串上市。 

前不久,王宽宽放出过“狠话”,要帮助1000个创业者年赚100万,让100个员工全款买房,让20个员工实现财富自由。 

在王宽宽之前,没有人想过炸串店还能开出连锁品牌并上市。大多数人印象中,炸串只是个有品类无品牌的市场,长期被贴的标签都是“路边摊”、“脏乱差”、“不起眼”之类的负面标签。 

看准了炸串的“万店基因”,王宽宽带着喜姐炸串冲刺“炸串第一股”,目前,喜姐炸串已经进入IPO辅导期,预计2025年上市。 

这一次,王宽宽的胜算有多大? 

从“小脏摊”到连锁品牌

炸串,承载着王宽宽的万店梦想。 

王宽宽对餐饮业情有独钟,尝试过很多餐饮的垂直赛道都无疾而终。唯一小有成就的是王贵仁砂锅麻辣烫(现名李炮麻辣烫),无奈受制于杨国福、张亮等头部品牌市场份额过高,短时间内冲不出来,王宽宽最终退出麻辣烫赛道。 

其实一个项目好不好,只看三件事:赛道、赛车、赛车手。

赛道,是选择的行业。 

炸串所处的赛道不拥挤,虽然游击队遍地,全国各地都不缺街边的夫妻摊,但是正规军很少。同属于新消费赛道的奶茶行业已经帮我们验证过,最终的结果一定是由正规军清理掉游击队。 

连锁型品牌通常是消费者最终的选择,因为店大意味着消费升级了,好处就在于更安全、满意度提高,消费者对客单价变得不敏感,产生好吃不贵的心理。 

同时,炸串的消费场景多样,在家、在店、在途皆可,可以说炸串是全消费场景的餐饮品类。炸串还具有成瘾性,市场不会枯竭。 

王宽宽选择炸串作为新的创业尝试,比以往10次的选择都更为明智,冲出来的可能性更大。 

赛车,是业务模式。 

炸串主打小门店、大连锁,做的是全供应链生意,门店得以彻底解放,连锁扩张不受限制,再加上对人工依赖较低,所以,只要连锁模型是稳定的,很容易快速复制扩张,形成规模化效应。 

小店很难通过一家门店赚的钱复制第二家、第三家,资本的运作很重要,王宽宽将喜姐炸串的开店成本控制在30万元以内,走精品小店模式,靠炸串小店的“万店基因”吸引资本。

如此这般,借势成熟的供应链体系和更强的议价能力,万店连锁的炸串品牌采购规模可达百亿级别,降低采购成本,让利消费者,从而做到好吃不贵,长此以往实现正向循环。 

喜姐炸串将复杂的工序全部留在工厂完成,包括产品包装、酱料全链条配送,门店只需要傻瓜式炸制售卖即可,这样一来,标准化的后台生产提高了人效与坪效,可以达到小产出快回本的效果。 

即使处于经济周期波动中,喜姐炸串的发展势头依旧明显,而且没有被疫情“黑天鹅”影响太多,原因在于,喜姐炸串侧重于外带和外卖,很少或者说没有堂食,最大程度地降低了疫情带来的危险,也降低了单店的投资额。 

赛车手,就是企业负责人。 

喜姐炸串打出“年轻+经验丰富”的组合牌,90后王宽宽更懂年轻人的口味和喜爱的营销方法,合伙人马群则做过千店连锁。 

至少作为投资方的嘉御资本还是比较信任喜姐炸串的赛车手的,投资喜姐炸串7500万元。谈 及融资,喜姐炸串融资速度不可谓不快,半年内融资金额累计高达3.7亿元。

在成为连锁品牌的路上,喜姐炸串抛弃了街头风,拒绝刻板的炸串“小脏摊”,在门店形象和包装设计上下了一番功夫:融入国潮剪纸和港风元素,色调采用中国红,打造了一个微胖但笑眯眯的喜姐IP,整体的基调就是强调一个亲切感。 

不可否认,到目前为止,无论是开店速度还是融资金额,喜姐炸串的成绩还是不错的。然而,一切都显得太刻意,似乎都是为了上市做准备,资本的味道太严重。 

仔细观察喜姐炸串的菜单,除了臭豆腐、香菇、杏鲍菇和玉米粒,其他的都是主食和肉食,绿色蔬菜少得可怜,肉占比很高,这是为了方便冻品化;售卖方式采用的是捆绑销售,10—30串为起点,消费者花了50元,最终可能只得到了3-4款产品,无形中提高了客单价。 

可以看出,喜姐炸串为了求快,放弃的是门店发展宽容度,产品丰富度不够,没有什么特色产品,消费者的体验相对来说是比较差劲的,外卖平台门店下的评论数可以佐证,基本没有破千的,竞品夸父炸串的评论数则远超喜姐炸串。 

喜姐家的作业好抄吗?

喜姐炸串也好,其他餐饮连锁品牌也罢,能快速开店的,都遵循了同一个公式:加盟+标准化。 

标准化,是优势更是桎梏, 这意味着喜姐炸串的竞争力不高,没有很深的护城河。 

对小店模型而言,开出几百家甚至上千家门店很简单。 

市面上大部分的炸串加盟店采取统一货品配送,加盟店只需要考虑好选址和日常运营,中央厨房负责做好所有炸串,然后速冻装配,通过冷链配送到各家加盟店,再现场炸熟配料。 

喜姐炸串也是省去了传统炸串前期制作流程中的腌肉和穿串环节,改用统一配送,在流程上能够快速做到出品标准。 

然而,实际品尝过喜姐炸串的消费者会觉得,至少在味道上没有太多惊艳感,或者说和之前在路边摊吃的炸串没什么差别。 

也就是说,喜姐炸串的产品竞争力不高,食材的品种、做法和口味,与其他炸串大同小异,没有太大差别。 

没有形成自身的优势壁垒,炸串又是制作门槛不高的行业,叠加食材普通,代表喜姐炸串可复制性极高,很容易被别人模仿,现在取得的成绩并不稳固。 

且不论专注做炸串的友商一大堆,还有跨品类的竞争玩家涌入。蜜雪冰城在北京、郑州等门店推出了“雪王炸串”,10元10串还赠送2串,正新鸡排在炸鸡排的基础上推出炸串,搭配其他产品一起售卖。 

当喜姐炸串选择了高标准、易复制的发展路径,就无形中将自己困在了没有个性化、只讲效率的竞争思维中,限制了未来的发展空间,还出现了一大堆雷同的品牌分食市场,喜姐 家的作业真是太好抄了。 

同时,喜姐炸串将炸串视为全部的生意,在品类不够强势的情况下,纯粹的炸串小店是弱于产品多元的品牌的,炸串属于小吃的一种,消费者更倾向于在一家门店里尝试更多美食。 

显然,蜜雪冰城价格低廉的饮料再搭配上炸串,是更香更划算的选择。 

此外,迎合年轻人的网红门店、包装引爆社交营销、酱汁臭豆腐特色产品造势出圈……喜姐炸串的打法仍然是新消费的老套路。 

抛开花里胡哨的动作,餐饮界的真理还是在于产品好不好吃。 

“每一种消费品,都值得重新做一遍。”2019年刷屏的一句话,到今天的投资圈只是换了一种样貌:“所有的传统品类,都可以拿来重新做一遍。” 

新消费赛道从来不缺高光时刻,缺的是长期主义者。 

谁都能做的生意可能就是做不大的生意,踩对风口,炸串也能开出连锁店,取得阶段性的成功不是一件难事。 

学会一系列的炒作和传播,讲个好听的故事,然后呢?高光过后,往往一地鸡毛。 

作为前车之鉴,五爷拌面就是血泪教训。截至2023年3月,五爷拌面在过去15个月里,关闭了约600家门店,闭店率高达41.8%,高标准化下的弱产品力,开再多门店也没用,一时的尝鲜留不住消费者,打动不了消费者的胃就赚不到钱。 

类似的新消费品牌还有很多,黄太吉雕爷牛腩、泡面小食堂……都是“盛名之下其实难副”,终归走向消亡。 

能够将品牌长久地做下去,才是件困难的事情,在品牌化的道路上,如何拉长品牌的生命周期,从昙花一现的网红魔咒中突围,是所有新消费品牌要考虑的,也是喜姐炸串和王宽宽必须要重视的问题。 

靠割韭菜上市?加盟是硬伤

炸串店普遍存在生命周期短、复购率不够高的问题,喜姐炸串如何保证加盟商能赚到钱? 

有研究人员直言,喜姐炸串能出来,和王宽宽快招公司出身有很大关系,从快招做起,再从快招脱身,想的都是怎么赚快钱。 

快招公司,就是打着连锁经营的幌子快速招商、加盟,以割人头费为主。那么,加盟商的利益就不在喜姐炸串的考虑范围内,相反,喜姐炸串考虑的是如何从加盟商身上赚到钱。 

可以先来算一笔账。 

喜姐炸串的加盟商从签约选址到正式开店,时间周期一般在一个月左右,这期间会有一次上岗前的总部培训学习,为期7天,不少于3人参加。 

据王宽宽介绍,喜姐炸串的加盟商根据县级门店、地级市副中心门店和地级市中心门店划分,加盟费分别为3.98万元、4.98万元、5.98万元三个档次。已经突破2000家门店的喜姐炸串,总部每年仅靠加盟费就能营收7960万元—1.2亿元。 

加盟商还需要花费2—3万元购买首批物料,出售物料的费用,每年又可以给喜姐炸串带来4000万元—6000万元的收入。

2022年,喜姐炸串营收高达16.5亿元。这也侧面印证了王宽宽放出的狠话是基于一定现实依据的。 

只是,在喜姐炸串这里,加盟商没有自由可言,处处受到限制。可能出于加盟商存在食品安全隐患问题的考量,喜姐炸串标品冻品化,提供全部的物料,加盟商拿货需要100%从总部进货。 

标品冻品化,是指喜姐炸串菜单上的所有产品都可以在冻品市场上找到,加盟商完全可以自己去冻品市场进货,不仅可以节省成本,还能采购到更多的产品。 

但是喜姐炸串硬性规定加盟商必须全部从总部进货,产品力弱的原因也在于此,不够多样化,食材也不够新鲜。 

单从这一点就能明显地看到快招的影子,喜姐炸串还是有意无意之间割了加盟商的韭菜。 

一个品牌是否可以让加盟商自己采购食材,体现的是该品牌的底气和实力。比如,杨国福虽然提供底料核心产品,但对于蔬菜及其他生鲜食材,加盟商可以自主采购,不同的城市出现的蔬菜会不一样,因地制宜,可以做到本土差异化。 

喜姐炸串的冻品化是为了方便品牌管理,而不是为加盟商创造更多的营收模型,喜姐炸串困住加盟商的同时,也困住了自己,喜姐家不上的产品,不代表其他家卖炸串的不卖。

王宽宽看到了炸串市场的狭窄,试图拓宽品类,增加炸鸡、卷饼、自研发饮料等产品;也尝试过选择从澳洲进口的牛肉、长保鲜蔬菜等增添“绿色健康”产品。无奈的是,炸串的底色摆在那里,难以动摇,也难以创新。 

互联网时代见证了太多迅速登上神坛又迅速跌落的新消费品牌,炸串是真风口还是泡沫,需要时间去大浪淘沙。
