谋定2023,咖啡行业正在迎来这些新趋势

咖啡行业表现出迅猛增长的态势。

2022年,整个消费行业一片哀嚎,咖啡行业却逆势上扬。

这一年,咖啡行业迎来多位跨界大佬,其中包括李宁、特步、内联升、华为、蔚来汽车等;这一年,国内连锁咖啡品牌新开店总数约为6855家,门店存量达到近23600家(数据来自壹览商业不完全统计)。

咖啡行业表现出迅猛增长的态势。那么,在持续增长的态势下,在口罩防控政策全面放开的大环境下,2023年的咖啡行业还将迎来哪些新趋势?结合咖啡行业近两年的发展轨迹,寻找未来的发展风向。

01 “复合”模型流行

近两年,我们看到,各大咖啡品牌在纵向深耕咖啡品类的同时,还在横向拓展咖啡运营渠道,丰富咖啡运营业态,形成“复合”运营模式。在这里,主要表现为三大方面:

1、复合产品

在茶饮品牌纷纷加入咖啡产品的同时,咖啡产品也在积极探索茶饮产品。包括头部品牌星巴克、瑞幸等品牌在内,均在茶饮新品研发方面投入了一定的精力。特别是瑞幸,还曾推出独立茶饮品牌小鹿茶。

而瑞幸原创始团队——陆正耀团队于2022年创立的咖啡品牌库迪咖啡,则直接将简餐、烘焙、小吃、酒类等餐饮品类引进咖啡厅,形成更丰富的产品架构,支撑全时段运营。

从几大品牌的行动不难看出,复合产品模式的价值主要集中在两大方面:一是迎合用户多元需求;二是优化运营模型,增加营收入口

2、复合模式

瑞幸发力线上渠道,三顿半陆续开设线下实体店,咖啡行业形成了线上线下“双向流动”的新态势。这背后,是整个咖啡行业对全渠道、全业态、全时段的积极探索

如今,堂食+外卖+外带+零售,几乎已经成为连锁咖啡品牌运营的标配。加上以上讲到的由多元品类组成的新业态,以及基于新业态的全时段运营,按照近两年的发展态势,对新渠道、新时段、新业态的探索依然是咖啡品牌创新的主要方向

3、复合场景

再往前追溯几年的时间,咖啡行业其实经历了一个非常明显的场景变化:从咖啡厅到快咖啡,再到体验咖啡的迭代与进化。

第一个阶段是咖啡在中国市场初步形成规模效应时,主要以咖啡厅为主,代表品牌有星巴克、迪欧咖啡等,人们主要享受咖啡厅带来的小资氛围。

第二个阶段即瑞幸形成现象级品牌的过程中,以瑞幸为代表的“快咖啡”品牌如雨后春笋般出现,它们打磨出堂食、外带、外卖和实体店的结合模型,最大化提升门店的坪效。

第三个阶段便是这里要讲到的“复合场景”,它可以看作是咖啡体验的回归,但它在“第三空间”之外又开拓出了一些新奇的场景。比如咖啡+露营、咖啡+电竞、咖啡+画展等,它们将咖啡融入到当下年轻人流行的生活场景中,最终实现传播、引流等多重价值。但就现在而言,“咖啡+”的复合场景还有待品牌进一步探索,还未形成稳定的模式和格局。

02 “本土”标签持续强化

从咖啡进入中国市场,就开始了它漫长的本土化之路。但显然,近两年随着咖啡行业的飞速发展,咖啡的本土化明显加快了节奏,甚至出现了“新中式咖啡”。

1、口味本土化

咖啡口味的本土化,和新茶饮的崛起有着异曲同工之处。

新茶饮用水果、奶、小料等来中和茶的涩,目的是为了让茶更迎合当下年轻人的口味;而当下国内市场的几款爆品咖啡,则用奶、果饮等来弱化咖啡的苦,目的是更适配中国人的味型特征。瑞幸的现象级爆品生椰拿铁、生酪拿铁;以及曾刮过一阵风的豆浆咖啡、豆腐花咖啡等,均是咖啡口味本土化的“力作”。

而经过咖啡品牌的持续探索和反复测试,我们发现,咖啡口味的本土化并不是本土食材元素和咖啡的简单叠加,或者说,它追求并不是所谓的国风元素,而是真正适配中国口味的咖啡味型

2、供应链本土化

公开数据显示,云南咖啡产量占据全国产量的九成以上。在云南咖啡产业腾飞的背后,是咖啡供应链本土化的大势所趋。特别是近两年在口罩环境下,越来越多的咖啡品牌积极打磨供应链的本土化。

包括雀巢、星巴克、瑞幸、三顿半、Manner等头部咖啡品牌在内,有的品牌在云南有自己的种植园,有的品牌打造了专属的云南产品系列……同时,供应链源头的本土化也反向推动云南咖啡产业的现代化和完善化。可以预见,受供应链本土化和口味本土化的双重驱动,咖啡的本土化还将释放出更大的想象空间。

3、场景本土化

除了口味和供应链本土化之外,基于服务维度的场景本土化也表现明显。特别是近两年,咖啡赛道上迎来了一批新中式咖啡,除了产品,中式场景也是这些咖啡品牌的一大看点

茶饮品牌茶颜悦色旗下的咖啡品牌“鸳鸯咖啡”,主攻茶咖类产品,在场景打造上引进了同心锁、竹林、灰瓦等中式元素;新中式国风咖啡的代表品牌“红盏”则将红瓦、红灯笼等经典中式元素进行了现代设计手法处理……这些与产品相辅相呈的场景打造,为品牌的“出圈”锦上添花。

03 连锁化加速推进行

NCBD餐宝典数据显示,2022年,咖啡门店的连锁化率达到了25%。从数据层面来看,咖啡行业的连锁化正在持续推进;从市场反馈层来看,咖啡行业的连锁化还将进一步加快。且就目前来看,咖啡行业连锁化的主要推动力量来自两个方向:

1、连锁品牌加速抢占市场

2022年上半年,NCBD餐宝典监测的40个咖啡品牌,平均新开门店数达到68.8家。面对愈发内卷的行业竞争,各大连锁品牌“不约而同”发力门店拓展,意在咖啡品类增长的红利下迅速抢占市场

瑞幸、Manner、挪瓦NOWWA等品牌也从未掩饰品牌开疆拓土的野心,虽然拓店战略跟随市场环境变化与自身发展需求一再调整,但品牌持续快速拓店的步调一直没变。那么,2023年,积极拓店的主流步调加上口罩防控的放开,咖啡行业势必将迎来新一波的拓店潮

2、区域品牌爆发潜能

除了全国性连锁咖啡之外,区域咖啡在2022年也呈现出“杀疯”的态势小红书上,宁波的歪咖啡、长沙的DOC和RUU、绍兴的Coco.Juliet、苏州的比星咖啡、东莞的FELICITY ORIGIN等等品牌, “出镜率”不亚于一些全国性品牌。

基于把区域市场做透,这些品牌中间在未来也或将诞生全国性品牌,且一旦这些品牌开启全国化连锁模式,可以爆发出来的潜力也不亚于全国性品牌。

04 业态趋于成熟

2018年,被咖啡业内人士普遍称为国内的“咖啡增长元年”、“咖啡新零售元年”,无论从哪一个“元年”来看,都力证咖啡在2018年的“起飞”。从这一年开始,中国的咖啡行业呈现出井喷式发展。 

而从2018年至今,咖啡行业之所以能够在口罩大环境下呈现出明显的逆势上扬态势,在一定程度就是吃了品类增长的红利。这几年,从高线到低线城市,国人对咖啡的认知大幅提升,消费需求呈倍数增长,才是咖啡行业实现飞速发展的根本支撑。

按照餐饮品类的发展规模,在高速增长后必将走进平缓期,而走进平缓期的背后,是业态、模式、认知等均趋于成熟。

1、业态格局趋于完善

历经几年发展,国内咖啡行业不再是咖啡厅和速溶咖啡的代名词,整个业态格局慢慢趋于完善

当下的咖啡行业,零售领域既有雀巢、麦斯威尔等资深元老,亦有三顿半、隅田川等新锐品牌;实体店领域有星巴克、Times等国际连锁品牌,亦有瑞幸、Manner等大放异彩的本土品牌;有连锁品牌探索着标准化经营之道,亦有单体咖啡厅坚持着个性化表达方式……这样的咖啡行业,业态格局逐渐稳定,随之,细分赛道上的品牌梯队也将逐渐稳定

2、品类教育趋于成熟

2022年底,瑞幸开启新一轮的联营合伙人,标志着其向更低线市场的进攻;而在此之前,在星巴克发布的2025年战略愿景中,有70个“新城市”被列入星巴克的清单,主目标也是下沉市场。

下沉市场,几乎成为各类型咖啡品牌的香饽饽,而下沉市场之所以表现出如此强劲的势能,有一个非常重要的前提条件——国内对咖啡品类的认知教育已经延伸到下沉市场,拓展到小城居民。当咖啡不再是“小资”的代名词,转而成为国人普遍的一种日常生活方式,意味着咖啡将适配于更多市场、更多人群。由此来看,终有一天,咖啡会成为像茶饮、火锅一样的餐饮品类,渗透各个层级的市场。

种种迹象表明,咖啡行业接下来还将迎来新一轮的增长,但在多品牌混战,高度内卷的大环境下,品牌可以吃到的行业红利注定越来越少。这意味着,下一轮的激战,拼的不只有品类创新,模式迭代,还有品牌自身的综合实力。谁的实力更强,谁生存的机率更大,成长的空间更广!
