毕竟,作为被奶茶滋养大的一代,喝奶茶的底线在于:即便是勾兑,也必须是现场勾兑出来的,绝不能自己动手冲泡。

作为杯装奶茶开拓者、曾经奶茶的代名词,香飘飘这辈子都没受过这般奇耻大辱。

不过时势总会捉弄人,前脚刚飞扬跋扈把香飘飘逐出山门,后脚就披头散发把它追了回来。

毕竟疫情、封控、居家接踵而来,香飘飘成了奶茶爱好者最后的委曲求全。这不,上海疫情期间,香飘飘运了一车奶茶驰援,饥渴难耐的人们恨不得甩着花手迎接。

香飘飘被重新提起是在疫情卷土重来的2022年,上次被人们记起,还是疫情咆哮而至的2020年。

这次,人们会花多久遗忘香飘飘?

01 香飘飘活成了奶茶的“对照组”

早在2008年,香飘飘就已经达到年销售3亿杯,杯子可以绕地球一圈。那时候的香飘飘可是最炙手可热的时髦饮品,绝不会有人问出“谁还在喝香飘飘”的荒唐问题。

如果你没喝过香飘飘,你的闺蜜、死党、甚至葬爱家族的兄弟姐妹们会争风吃醋买给你。作为时代的弄潮儿,你不许没喝过香飘飘,更不许输给手里捧着优乐美的女孩。

十几年过后,按照3亿杯绕地球一圈计算,香飘飘已经绕了地球几十圈,然而它最终把自己绕成了一颗卫星——持续存在,却让人毫不关心

的确,在现制奶茶称霸天下的当下,为了格调可以喝喜茶,为了品质可以喝奈雪的茶,为了性价比可以喝蜜雪冰城,此外还有一众正胶着的成长期品牌,如书亦烧仙草、茶百道以及沪上阿姨等。在明面上已经难觅手捧香飘飘的男孩女孩了。

在社交平台上深挖,有了另一个发现:当年的奶茶顶流,如今活成了奶茶的“对照组”

香飘飘常规上是作为“比较级”出场,当你形容某品牌的现制奶茶不好喝的时候,就可以拉上香飘飘较量一番:XXX的奶茶做成这样,还不如我亲手冲的香飘飘

语气中带着恨铁不成钢的威胁,劝某些奶茶品牌最好识相,否则香飘飘的今天,就是你的明天。

香飘飘还常扮演气氛组,香飘飘的出现预示着主人公陷入了困顿挫折之中:有人在弹尽粮绝之中翻出了一杯香飘飘,扛过了“困难时期”;也有人感慨如何的情势所迫才能连喝香飘飘也得发条朋友圈。

重点不是香飘飘,而是主人公处境的转折,毕竟意气风发斗志昂扬的时刻,手中握着的一定是一杯“真奶茶”。

当然,香飘飘偶尔还作为怀旧时代的代名词出现,当香飘飘还是奶茶的同义词替换的时候,车马慢、书信远,浅喝一杯香飘飘就能幸福一整天。

香飘飘在社交平台上活成了奶茶的“对照组”,它的业绩也确实成了现制茶饮的对照组:

根据中国烹饪协会发布的《2021 年中国新式茶饮行业研究报告》,2015-2020 年期间新式茶饮行业年复合增速达 23.55%,预计到 2025 年行业规模有望达 2110 亿元,消费者规模截至 2020 年底已达 3.4 亿人。

然而“对照组”冲泡式奶茶的市场增速却自2017年持续下滑,其中2018年的市场规模仅为49亿元。

香飘飘的业绩也从2018年开始下滑,2021年香飘飘营收仅为34.66亿元,同比下降7.83%,归母净利润2.23亿元,同比下降37.9%。2022年第一季度营收4.96亿元,净亏损5967.7万元,同比下滑2105.78%。

业绩下滑,股价更是雪上加霜:截至2022年5月12日,香飘飘的股价跌至11.28元/股,相比157亿元的巅峰市值,香飘飘的市值蒸发了超过100亿元。

曾经绕着地球飞的香飘飘,是如何坠落大气层的?

02 时代的眼泪?

这还要从香飘飘的发家史说起,时势总会造就英雄,就如同当下的时势让香飘飘短暂地繁荣了起来,当年的时势也促使香飘飘获得了前所未有的成功。

2005年,从事棒棒冰生产的蒋建琪意外发现了奶茶的商机:在街边台湾珍珠奶茶“大乱斗”的时代,人们总需要排长长的队伍才能买到一杯奶茶,既然奶茶这么红火,为什么不生产出一种可以免去排队麻烦、方便冲泡的奶茶呢?

抓住了消费者的痛点,香飘飘推出了冲泡式奶茶。仅用了一年,销售额从数千万元一跃而至4.8亿元。看到了香飘飘的成功,喜之郎旗下优乐美、大好大旗下相约以及立顿,纷纷加入战局想要分一杯羹。

为了守住自己辛苦开拓的疆土,蒋建琪结识了以“定位理论”闻名的咨询公司特劳特公司。定位理论是当年营销界最负盛名的理论,主张品类即品牌,通过打造品牌的差异化、运用大量的广告让品牌占领消费者心智,最终实现提到奶茶,脑中直接跳出香飘飘。

在特劳特公司的建议下,蒋建琪砍掉了冲泡式杯装奶茶以外的其他业务,包括经营得非常好、面积达到一百多平米的奶茶店,从而打造出了香飘飘与喜之郎、大好大及立顿间的差异。

如果当年香飘飘坚持把奶茶店开下去,今日的奶茶江湖或许会是另一番景象。

通过聚焦冲泡式杯装奶茶,香飘飘找到了自己的定位,紧接着便是巨额广告费用的投入。

在2006年,香飘飘尚未累计雄厚资产的时候,便斥资3000万买下了湖南卫视黄金时段的广告位。在随后的日子里,除了硬广之外,从《哦滴歌神》、《中国梦想秀》、《我爱记歌词》等综艺的冠名、赞助,到《三生三世十里桃花》、《欢乐颂》、《老九门》等热门影视剧的冠名、植入,香飘飘用真金白银砸向了消费者心智:

香飘飘就是奶茶,奶茶就是香飘飘,连村里的大爷大娘都能轻松完成这道连连看:奶茶,不就是杯子绕地球的那个么?

当香飘飘笃信定位理论之时,它成为了时代的荣耀,但也埋下了成为时代眼泪的种子。

在独立快消行业资深研究员刘戈看来,就主流冲泡类产品而言,很难找出现在的香飘飘与十年前的香飘飘有多大的差异。

“消费者需要的是与时俱进的产品,而不是自以为可以为消费者保留饮用习惯的产品”,刘戈说。

的确,从2008年香飘飘绕地球元年算起,十余年间,人们的生活习惯已经发生了天翻地覆的变化:先是现制奶茶店满足了人们对新鲜、美味、健康的奶茶的想象,接着是外卖平台主宰了上班族的一日三餐及下午茶、夜宵。

实难想象需要一种怎样的契机才会亲手用开水泡一杯香飘飘,或许在奶茶店匮乏的四五线城市或小镇农村?或许在外卖无法抵达的全封闭工厂或学校?至少在都市主流消费者眼里,日常生活的场景里很难容下一杯香飘飘。

香飘飘真的没有改变吗?

其实香飘飘一直都有着试图改变的小动作:例如也曾推出过代餐谷物麦片、代餐奶昔,以及足够有噱头的奶茶自热锅。甚至还布局了即饮类的产品:蜜谷果汁茶、兰芳园港式奶茶等子品牌及产品。

不过,在刘戈看来,与日新月异的消费环境相比,香飘飘的变革过于保守和缓慢了

根据香飘飘2021年财报,香飘飘冲泡类营收占总营收的比例高达81.2%,果汁茶、港式奶茶等即饮类业务在短时间内或许很难成为香飘飘的重要营收支柱。

要知道,外面奶茶的世界可是在创意与速度上真刀实枪的厮杀,单是春季限定,各家就能从樱花、草莓卷到刺梨、山茶花;喜茶更是在2021年推出了107款新品,平均3天左右便上新一次。

这种内卷程度可不是“温室中”的香飘飘可以想象的。

为什么不敢大刀阔斧改进产品?

定位理论给香飘飘埋下的危机便在此处:竭尽全力定好的位置,花巨额营销费用才占领好的消费者心智,任谁也不甘心就这么舍弃。据统计,2012年至2021年,香飘飘的营销费用合计已经达到了66.345亿。

然而这个时代,定位理论越来越走不通了。原阿里研究院副院长、阿里新零售研究中心负责人希疆认为,定位理论把消费者预设为“傻子”,因此广告轰炸才会深入人心

但如今消费者在社交网络的赋能下越来越聪明、主动,想要打动这届消费者,扎扎实实把产品做好,提高消费者的体验,才最靠谱

03 给我一个选择香飘飘的理由

在当下,品牌的成功法则不再是灌输式的营销或固守成规的定位,而是体验。

奶茶应该提供怎样的体验?

在刘戈看来,奶茶一定是种强社交体验的产品,从同事间互相传递手机点单,到一起分享甚至拍照炫耀。而且奶茶背后的意涵是惬意,就如同曾经很火的“三点饮茶歌”,忙了大半天终于可以歇一歇,偷得浮生饮茶闲,饮茶大过天。

再反观香飘飘的冲泡式奶茶,它们能提供什么体验?

口感上乏善可陈、整花活上更是平平无奇,难道是与2005年如出一辙的“方便”吗?方便对于奶茶爱好者而言可没有什么优先级。

即便仅从“方便”这一点看,一众茶饮品牌早就做了技术上的革新,例如三顿半推出了冻干茶粉、八分之三推出了浓缩茶原液、水獭吨吨推出了3秒超即溶茶块,配上常温牛奶就是一杯奶茶。

然而香飘飘直到今年5月16号才推出了可以冷泡的“脆啵啵牛乳茶”,在此之前,想喝一杯香飘飘冰奶茶,需要用开水冲泡开、放凉、再加入冰块。

随着喜茶、奈雪的茶等头部现制奶茶品牌的普遍降价,奶茶消费在“降级”,然而这群被现制奶茶培养出来的消费者,恐怕也降级不到香飘飘的头上。

香飘飘还有机会吗?
