方便面的高端化发展“悖论”

方便面这一品类之所以能够在方便速食赛道中脱颖而出,抢占大量市场份额,价格相对低廉是主要原因。

冲向太空的康师傅,能够脱离“脚底”趣味?

受消费者需求转变的影响和存量市场竞争压力的推动下,高端化也在成为当前方便面行业的新风向,以康师傅为代表的企业,大都开始推出或正在筹备高端方便面,比如康师傅的“御品盛宴系列产品”、统一的汤达人系列。

然而,方便面这一品类之所以能够在方便速食赛道中脱颖而出,抢占大量市场份额,价格相对低廉是主要原因。换言之,方便面与高端化本就存在着悖论关系,方便面贸然涨价或许并不会被消费者接受。

况且,高端化的前提是基础牢固,食安问题不断的方便面赛道,真的做好高端化的准备了吗?

一、价格上探空间有限,方便面成长价值存疑

受外卖、预制菜崛起、方便速食品类多样化等供给侧影响,方便面的市场需求一直在下滑。自2012年开始,我国方便面产业就已开始掉头向下,发展衰弱趋势明显。

数据显示,2010年方便面总产量达501亿包,达历史峰值,人均消费37.5包,至2015年人均已只有26.3包;2018-2021年期间,方便面年产量更是连续四年递减,其中2021年我国方便面产量同比下降7.9%至512.96万吨,与2017年的1103.2万吨相比,呈现出断崖式下跌。

产量的上限不断被压缩,一定程度上意味着赛道本身的成长性受限,进而会影响到企业的品牌价值的稳定性。尤其是对康师傅这类方便速食快消品牌来说,市场上的任何风吹草动都有可能影响到企业市值的稳定性。

以康师傅为例,近一年来其股价一直处于波动状态,股价也从今年2月的17.028港元/股,下跌至当下的13.280港元/股。除了“土坑酸菜”事件的影响外,后疫情时代餐饮外卖、预制菜等替代消费品的场景受限程度缩小,方便面市场需求快速回落也是主要原因之一。

因此,通过高端化提高品牌价值,对于方便面企业来说,势在必行。

品牌高端,卖点先行。

要想降低消费者对方便面价格的敏感度,提高高端产品的销量,企业势必要先推出一个新颖的卖点吸引消费者买单。纵观整个方便面赛道,各大企业高端产品的卖点打造大都围绕着提升产品品质展开。

比如五谷道场曾通过非油炸面饼的噱头大获成功,统一汤达人则是通过面饼提质和料包提质两个方向齐头并进,在方便面高端化市场获得了一席之地。

无论是面饼非油炸还是料包的全新升级,都较为直观地向消费者传达了自身产品与大部分同行的不同,从而提升消费者对于高价产品的接受能力。这实质上借助的是锚定效应,推出一个卖点,让涨价有据可依,有证可查。

锚定效应是一种心理现象,是指当人们需要对某个事情做定量估测时,会将某些特定数值作为起始值,起始值像锚一样制约着估测值。

换言之,起始值越高,估测值也就越高,比如星巴克售卖依云水,依云水定价为22元,而咖啡的定价大都在30元左右,依云水的作用其实就是锚定物,提升消费者对产品的心理预期,当看到矿泉水都卖22元时,大部分消费者就很容易接受咖啡的价格,购买概率大大增加。对于方便面企业来说,非油炸面饼或升级料包就是起始值/锚定物,产品高售价就是估测值。

同时,锚定物选择的不同也制约着产品的溢价空间,锚定物在消费者心中的重要性越高,产品提价的空间也就越大,比如五谷道场的综合售价就低于汤达人。对于消费者来说,非油炸大都只是在心里获得安慰,实际效果并不明显,而料包和面饼综合升级的汤达人则是实打实地提高了方便面的口味,消费者易感知。

或是基于这点,康师傅试图通过 “御品盛宴系列产品”料理包的升级,进一稳固高端市场。与市面上常见的脱水蔬菜料理包不同,“御品盛宴系列产品”料理包则采用了大块肉、新鲜蔬菜这一发展路线。

多肉加新鲜蔬菜的推出意味着研发费用和成本的提升,售价自然也大幅度提升,一旦该系列能够被广大消费者接纳,康师傅在方便面高端市场的根基货或将愈加稳固。但要想达到这一愿景,康师傅首先要解决方面便溢价空间有限的行业根病。

对于方便面这一赛道的来说,产品的溢价空间是有限的,并不完全遵循起始值越高,估测值越高这一逻辑。换言之,并非方便面的成本越高,锚定物越高级,就一定能打动更多消费者。原因在于方便面本就是一定的价值上限,而价值相对较低本就是方便面能够畅销的重要原因之一。

由于方便面只有面饼和料包,且目前大部分品牌的料包大都是干料,成本透明度较高,溢价空间有限。大块肉和新鲜蔬菜确实能够提高方便面的价值上限,但高价值产品并不畅销的问题也随之而来。

相对于自热类(自热火锅)、轻烹类(螺蛳粉、意面)方便速食来说,食材相对单一的方便面,无论是营养价值还是在口味上都稍逊一筹,但胜在方便面的生产难度较低。

生产难度低也就意味着产品能够高度标准化,渠道杠杆更大,销售范围更广,更容易发挥规模效应。数据显示,目前冲泡、自热、轻烹三类方便速食的市场容量大致为750亿元、120亿元、230亿元,其中标准化程度最高的冲泡类中,方便面的市场容量独占600亿元左右。

康师傅采用新鲜蔬菜和大肉块徒增了方便面的生产难度,变相了削弱了规模效应,商品的运输、销售难度也因此徒增。

并且,“御品盛宴系列产品”虽然从食用方式上来看仍可以归类于冲泡类方便食品,但销售卖点已经在向口味和营养靠拢,与自热类、轻烹类方便食品的客户群已经部分重叠,方便面要想靠食用方便这一优势与口味更丰富、营养更健康的其他方便食品竞争用户,难度不言而喻。

值得注意的是,如今外卖的客单价大致在20-30元左右,方便食品的常规定价大致在8-15元,没有大肉块和新鲜蔬菜的高端方便面产品已经普遍进入了5元地带,可以预见的是,在5-15元这一定价区间,定价越高,产品的受欢迎程度或许就越低,在价格上留给康师傅“御品盛宴系列产品”可操作的上探空间已经不多了。

二、食安问题背后的信任危机,绝了康师傅的高端路?

以康师傅为代表的方面便企业,要想提高方便面的成长价值,或许还需要在品牌价值的赋新上下功夫。

在推动高端化上,品牌价值的赋新更像是品质提升的“补丁”,可以让产品溢价更合理,并有希望进一步放大产品卖点,提高整体溢价。

就比如五谷道场的成功就离不开品牌价值的赋新,通过宣扬非油炸面饼的好处标榜自身是健康食品,并把其他同行的产品归类于“垃圾食品”;统一汤达人除了对面饼和料包进行了针对性的营销外,还通过小分量包装进一步强调自身的“高贵属性”,一系列组合拳下提升了品牌价值,让消费者心甘情愿地为“小分量”方便面买单。

要想通过营销引起消费者的共鸣赋新品牌价值,既需要站在企业的立场上,旗帜鲜明地传达出品牌的价值主张,也要顺应消费者,防止营销过于直白引发反感,这对于品牌来说,并不容易。

这也是为何大部分方便面品牌除了结合卖点进行针对性的营销外,其余营销大都中规中矩、看似毫无亮点的原因之一。

就比如在11月25日至28日“2022中国企业家博鳌论坛”上,新华社瞭望智库大健康研究院联合“数字品牌榜”研究机构,发布了《2022食品行业品牌美誉度指数年度报告》,宣布康师傅位居中国食品行业第四名,方便面食品品类中排名第一。

无独有偶,在凯度消费者指数发布的《2022品牌足迹》中国市场报告中,康师傅也再一次一次入选“中国消费者十大首选品牌榜单”。

以上两大殊荣,无一不是在传达康师傅在消费市场大受欢迎,品牌的美誉度和消费倾向都处于高位,甚至有机构把康师傅称为“国民品牌”。

在某一排名上取得亮眼的位次,这是包括统一、今麦郎、康师傅在内方便面企业“广而泛”营销的常规套路,旨在让消费者对其品牌的好感度倍增,获得较高的品牌声量和良好的品牌声誉。

然而此举看似为品牌增加了诸多“噱头”,但似乎并没有在左右消费者决策上起到关键性的作用。

相对于形而上的虚名,在价格、口味、安全等因素上做针对性营销,或许才能极大限度地影响消费者。影响消费者决策的关键因素,其中安全最重要、口味其次。原因在于,消费者选择高度标准化的方便面,本身就是对饮食营养与口味的妥协,高度妥协之下,消费者对于高度标准化的产品仍出现食安问题,自然无法接受。

就比“土坑酸菜”事件就引发了消费者的震动,在食品安全面前,品牌之前的一切铺垫似乎都失去了作用,甚至连行业格局也发生了不小的变化。

康师傅哪怕后续及时下架了老坛酸菜并公开道歉,也并未完全消除影响,甚至还因此遭受了信任危机,此后爆发的“老鼠屎”争议还未完全定性,就有消费者已经开始恐慌。反之,没有遭受“脚底酸菜”影响的白象,则借助安全、口味上宣传,业务开始逐渐回暖。

口味和安全两大因素之所以能够对方便面领域产生如此大的影响,原因在于消费者选择高度标准化的方便面,本身就是对饮食营养与口味的妥协,高度标准化的产品仍出现食安问题,消费者自然无法接受。

或是为了消除负面影响,或也是为了高端化铺路,康师傅也开始在营销上进行创新,试图通过与航天挂钩,用产品品质对标“航天品质”实现品牌价值的提升。

颠覆性的营销确实能给消费者留下较深的印象,但对于食品安全,互联网是有记忆的,消费者也大都践行着“瑜不掩瑕”的消费理念,修补过的洞,或许永远无法恢复完美无瑕的状态。

写到最后:

相比其它在存量市场内卷的领域,方便面赛道无疑要幸运得多,疫情反复的大环境使得方便面的市场需求获得了一次大反弹,变相地缓解了方便面企业高端化的压力。
